Birria is a regional variation of barbacoa from western Mexico, our recipe calls for beef. The meat is marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices before being cooked in a broth. Melted Mozz and a side of chips drizzled in lime completes the dinner.
